The Rules of Dressing~1) Vinaigretts are 3/1 oil/vinegar(citrus)
2) Try a 2/1 ratio
OILS~ olive, canola, pnut, sesame or fancy oils
ACIDS~ balsamic, red/white wine vinegar, rice vinegar, sherry vinegar, fresh lemon juice, fancy vinegars
FLAVOR BOOSTERS~ Dijon, pesto, minced shallots, egg, blue or parmesan cheese, honey, hot sauce, garlic, grated ginger, fresh herbs etc......Recipe
1) Balsamic~ 1 T minced shallot, 2T balsamic vinegar, 1/4 C olive oil, snp
2) Honey Mustard~ 1/2T honey, 1 T Dijon, 2 T red/white wine vinegar,1/4 C canola, snp
3) Blue Cheese~ 1/4 C crumbled blue cheese, 1 clove garlic(minced), 2 T white wine vinegar, 1/4 C olive oil, 2 t minced chives or scallions
4) Asian~ 1 T Dijon, 1/2 T soy sauce, 2 T rice wine vinegar, 1/2 T toasted sesame oil, 1/4 C pnut oil, 1 t sugar
