Fiery Apple Chutney

Recipe Introduction
Fresh chillies are preferable to dried. Use as much or as little chilli as you desire.
List of Ingredients
FIERY APPLE CHUTNEY
4 Lge cooking apples, peeled, cored & diced
500g Onions chopped
½ Tsp. Crushed dried chilli
1 Small clove garlic crushed
1 Tbsp. Finely chopped ginger
3 Cups soft brown sugar
2 Cups white vinegar
1½ Tsp. Mixed spice
1½ Tsp. Turmeric
1 Tsp. Five spice
1 Tsp. Salt
1 Bay leaf
1 Cup seeded raisins chopped
Recipe
Combine & simmer gently uncovered, all ingredients except[t raisins for 1¼ hours. Stir in raisins. Simmer for 30min. or until chutney is thick.
Cook beans in salted water until tender. Cook onions in ¼ of the vinegar, until tender. Mix beans & onions, add the sugar & rest of the vinegar. Cook about 10min. Add spice & flour (mixed with vinegar). Cook, stirring well for 10min. Should be fairly thick consistency.
To make a mixed chutney add 2lb finely chopped apples & use dark brown sugar.
Cool before sealing. Store for at least 2 weeks before using.
