Lemon & Lime Marmalade
List of Ingredients
700G Lemons. 800g Limes. 8 Cups water. 8 Cups Sugar.
Recipe
Wash & dry fruit well. Quarter & finely slice. Place in a large saucepan with the water.
Tie any seeds in a muslin bag & place in the saucepan. Cook uncivered on moderate heat for 45 - 50min., or until fruit is soft. Measure the pulp & allow 1 cup sugar to each cup of pulp.
Cook 4 cups of pulp at a time with warmed sugar until setting point is reached. Bottle & seal. Repeat with remaining pulp & sugar.
