    Lime Marmalade

    List of Ingredients




    LIME MARMALADE

    1lb Limes. 2 ½Lb Sugar. 2 ½ Pints Water.

    Recipe



    1. Cut or mince the limes finely, removing the pips.
    2. Soak the peel & pulp overnight in the water together with the pips, which should be tied up carefully in a piece of muslin.
    3. After soaking put the fruit, water & pips in a covered pan.
    4. Simmer slowly for approximately 1 ½ hours until peel is quite soft.
    5. Take out the bag os pips.
    6. Stir in the warmed sugar, until sugar is dissolved
    7. Bring the marmalade to the boil.
