    Lime Marmalade No 2

    1Kg Limes. 2L Water. 2Kg Sugar.

    Recipe





    Wash limes, slice finely, place in boiler, add water, cover & bring to the boil. Reduce heat & simmer covered for 1hr. or until rind is tender.
    Measure mixture, a low cup of sugar to each cup of mixture. Return to boiler, stir over high heat without boiling until sugar is dissolved, bring to boil, boil rapidly without stirring for 20min. or until jam jells when tested on a cold saucer.
    Pour into hot sterilised jars & seal when cold. Makes about 9 cups.
    Half a cup of brandy may be added before pouring into jars.
