    MUSHROOM & RED ONION SAVOURY MARMALADE

    List of Ingredients





    Make a cheeseboard or antipasto platter memorable by accompanying it with this delicious savoury marmalade. Excellent served with BBQ meats.

    2 Cups Mushrooms sliced. 1 Red onion cut into thin wedges. 2 Tbsp. Olive oil.
    2 Garlic cloves crushed. 2 Tsp. Soy sauce. 2 Tbsp. Brown sugar.
    1 Tbsp. Fresh Thyme. 2 Tbsp. Vinegar.

    Recipe



    Place mushrooms, onion, olive oil, garlic and soy sauce into a saucepan.
    Cook, uncovered, over low heat for about 25min or until veges are soft and tender. Stir occasionally to prevent sticking.
    Add the sugar and thyme.
    Increase the heat but do not boil. Cook, uncovered, for about 10min. Stir in vinegar.
    Remove from heat cool.
    Serve in a decorative bowl with baguette slices or pita bread wedges to accompany a cheeseboard. Serve with fresh crudites such as sliced continental cucumber, Sliced red capsicum, cherry tomatoes and snow peas.
