    Microwave Lime Brandy Marmalade

    List of Ingredients




    MICROWAVE LIME BRANDY MARMALADE

    8-10 Limes. 5 Cups Water. Sugar. ¼ Cup Brandy.

    Recipe



    Wash fruit & slice thinly. Cover with water, add brandy & let stand overnight, or for several hours.
    Place fruit & water in a bowl & cook on high Until rind is tender (about 6-10min.). Strain to remove pips & rind.
    Measure strained mixture allowing equal quantities of sugar to each cup of fruit mixture.
    Reheat mixture on high to boiling point. Stir in required amount of sugar until dissolved.
    Return uncovered mixture to microwave & cook on high for about 15-20min. until setting point is reached.
    Fill clean, warm sterilised jars to brim with marmalade.
    Fit lids on jars immediately. Do not allow to cool, because warm marmalade will create condensation causing mould to grow.
