Orange & Grapefruit Marmalade
List of Ingredients
3lb Citrus (4 oranges,2 grapefruit & 1 Lemon). 5lb Sugar. 1 Bottle commercial pectin.
1 Level Tbsp. Bicarbonate of soda. 1 ½ Pints water.
Recipe
Wash fruit & remove skins by cutting in quarters then shave off & discard half the pith. Shred skins very finely & place in pan with water & baking soda.(this helps to soften the skins). Bring to the boil the simmer covered but stirring occasionally, for about 30-40min. until skins can be crushed easily between finger & thumb.. Cut up the peeled fruit discarding the pips & tough skin. Add pulp & juice to the cooked rind & simmer 20min. longer. Put sugar & 3 pints prepared fruit into pan making up the quantity with water if necessary. Boil slowly, stirring occasionally until the sugar has dissolved. Add pectin & boil 20min. or until jell point is reached. Bottle as per normal.
