    Steve's Dinner Rolls

    Steve Helgeson claim to culinary fame are these dinner rolls. Each holiday it's a toss up as to whether Janet makes our Mother's Cinnamon "sticky buns" or Steve serves his family dinner rolls. Proudly he serves the dinner rolls to the entire family asking "Would you like another one of my rolls?".

    (The Truth: Steve couldn't bake these rolls if his life depended on it. His sister, Rosemary Helgeson, makes them and brings them to Holiday gatherings. Steve just takes the credit for them.... and Rosemary let's him.)


    List of Ingredients


    • 2 cakes Fleischmann's Yeast (refrigerated in the Deli)
    • 1 Tablespoon sugar
    • 1 cup lukewarm water
    • 1 cup milk
    • 6 Tablespoons shortening
    • 1/2 Cup Sugar
    • 1 teaspoon salt
    • 3 eggs, beaten
    • 7 cups sifted flour


    Instructions


    1. In a small bowl, dissolve yeast in lukewarm water, add 1 tablespoon sugar--let set.
    2. Heat the milk hot to scald.
    3. In a large bowl mix 1/2 cup sugar, shortening and salt. Pour in hot milk. Mix and cool to lukewarm.
    4. Add 2 cups flour, mix well.
    5. Add the slightly beaten eggs and stir.
    6. Add the yeast and stir well.
    7. Gradually add the remaining flour or enough to make a dough that does not stick to your hands.
    8. Place on a board or table and knead until smooth.
    9. Place dough in a greased bowl and allow to raise until double size...about 1 1/2 hours.
    10. Shape into rolls and set in a warm place to rise double in size again...about 1 1/2 hours.
    11. Bake in preheated oven at 375 degrees for about 20 minutes or until golden brown.


    Final Comments


    Tips: If you play with the dough too much when shaping it, it will not rise as much as it should. There are 2 shapes: The Crescent is made by rolling out some of the dough with a rolling pin into a rough circle and, with a sharp knife, cutting the circle up into triangles like a pizza. Starting from the wide end, roll up triangle and place on a cookie sheet. The other is a cloverleaf: Using a muffin tin, Take a small amount of dough and shpe into a smooth ball. Pleace three of these balls into each muffin tin hole.

    Last but not least, when the rolls come out of the oven, brush them with melted butter.
