This is the same mix that was used as the base for the Blue Ribbon Rum Cake.
List of Ingredients
For the Mix:
2 cups Cake Flour
1 1/2 cups granulated sugar
4 tsp Baking Powder
1 tsp salt
1/4 lb. (1 stick) butter or margarine
3 Tablespoons oil
To Use the Mix:
1 cup Milk
1 1/2 tsp. Vanilla
3 eggs
Instructions
To Make Mix:
Use and electric mixer on low speed to combine the ingredients in a large mixing bowl.
When the mix is the consistancy of fine gravel, and all of the particlels are almost equal in size, store mix in a 6 cup container and keep it refrigerated, and tightly covered.
Use mix within 3 months.
Makes 5 cups mix.
Recipe may be multiplied as needed.
To Use as Cake Mix:
Combine the 3 ingredients in one cup, without beating them together, and dump into 5 cups of the cake mix.
Beat on High speed of electric mixer for 6 minutes, scraping sides and bottom of bowl several times while beating.
Divide batter equally between two 8" greased and floured pans.
Bake at 350 degrees for 35 - 40 minutes or until toothpick inserted in centers comes out clean.
Cool 30 minutes in pans on wire rack.
Invert onto waxed paper lined paper plates to cool another 30 minutes.
Then assemble with top-side of layers down, using your choice of icing between, on top and the sides of the cake.
Makes 2 8" layers.
For Oblong Cake:
Increse baking time in above recipe to 45 - 50 minutes or until cake tests done.
For Cupcakes:
decrease baking time to 25-30 minutes or until toothpick inserted comes out clean.
