Seven-Minute Frosting
My childhood memories of special cakes that my mother made frequently were of those with Seven-Minute Frosting. I know that I requested my birthday cakes (she made pink ones) with it and I loved to lick the spoon!
List of Ingredients
- 1 1/2 cups sugar
- 1/4 teaspoon cream of tartar
- 1/4 teaspoon salt
- 1/3 cup water
- 2 teaspoons light corn syrup
- 2 egg whites
- 1 teaspoon vanilla
Instructions
- In the top of a double boiler, combine all ingredients except vanilla.
- Place over rapidly boiling water (water should not touch the bottom of the pan)
- Beat with an electric mixer at the highest speed until mixture stands in peaks, about 7 minutes. (Do not overcook.)
- Remove from heat; Add vanilla.
- Continue beating until frosting holds deep swirls, about 2 minutes.
- Frosts 2-layer or 13 X 9 inch cake.
- VARIATIONS:
Seven-Minute Cherry Frosting: Substitute 1/3 cup maraschino cherry juice for water. Fold 1/3 cup drained chopped maraschino cherries into finished frosting.
- Seven-Minute Chocolate Revel Frosting: Add 1/3 cup semi-sweet chocolate chips to finished frosting. Let stand 1 to 2 minutes. Chocolate will swirl through frosting when spread on cake.
- Seven-Minute Lemon or Orange Frosting: Fold 3 teaspoons grated lemon or orange zest into finished frosting.
- Seven-Minute Peppermint Frosting: Substitute 3 - 5 drops peppermint extract for vanilla. Fold 1/2 cup crushed hard peppermint candy (or candy canes) into the finished frosting.
