    Baked Potato Salad

    This one is now "Tried and Tested" and was given rave revues from the Bunko Babes.....tastes just like a cold baked potato.

    List of Ingredients




    Baked Potato Salad

    10 white potatoes (about 5 pounds)
    1 large carton light sour cream -- (24-ounce)
    1 package bacon -- (16-ounce) crisply
    fried and crumbled
    1 cup green onions -- chopped
    16 ounces shredded Cheddar cheese or Cheddar/Jack Combo
    Salt and freshly ground black pepper to taste

    Recipe



    Peel potatoes and cut into small chunks. Place in large pan. Cover with water, bring to a boil and gently boil uncovered until tender, about 20 minutes.

    Drain and cool.

    When potatoes are cool, stir in sour cream, bacon, green onions, cheese, salt and pepper; cover and chill.
