    Gulliver's Creamed Corn

A family favorite during the holidays. Even the kids will love this one.

    List of Ingredients

    • 8 ears corn or 1 -- 16oz. Bag Frozen White Corn
    • 1 cup whipping cream
    • 2 teaspoons salt
    • 2 teaspoons sugar
    • Butter or margarine
    • 2 teaspoons flour
    • Grated or shredded Parmesan cheese (fresh works best)

    Instructions

    1. Cut corn from cob (or open package of frozen corn) and place in saucepan with whipping cream. Bring to a boil, reduce heat and simmer 5 minutes.
    2. Stir in salt and sugar.
    3. Melt 2 teaspoons butter in small pan and stir in flour. Do not brown.
    4. Stir butter-flour roux into corn and cook until slightly thickened.
    5. Turn corn into oven-proof dish.
    6. Sprinkle with cheese and dot with butter.
    7. Brown under broiler.
    8. Makes 8 - 10 servings.

    Final Comments

***I also add about 1/2 cup of parmesan cheese to the corn mixture before I place in the oven.

This recipe is easily doubled or tripled for a large gathering. A triple recipe is what I need for our Holiday dinner.
