List of Ingredients
- 1 cup plus 2 tablespoons of fine semolina flour
- 1/3 cup of regular semolina
- 1/4 teaspoon of sea salt
- 2 tablespoons sugar
- 4 tablespoons butter (softened) plus some extra for frying
- butter or honey to serve
Instructions
- Put both types of semolina, salt and sugar in a mixing bowl.
- Using your fingertips work in the softened butter and gradually add about 1/4 cup of water to bind to a firm dough. Knead it just enough to make it homogenous.
- Roll out the dough to 1/2" thickness. You can make a large round shape or use a biscut cutter to make smaller disks.
- Brush a large non stick frying pan with butter and place over medium heat.
- After the pan is hot at the dough and cook for about two minutes on each side. You do not want them to color much, just to become firm.
- Transfer to a serving platter and serve hot with a dollop of butter or honey on each galette.
