Strawberry Pie
Recipe Introduction
This recipe comes from Marvel Sanders of Morgantown, IN. The Sanders were more like family than friends. Marvel always cooked on a wood burning stove (even after she had a gas stove in her kitchen). Water came from a pump on the front porch.
List of Ingredients
- 1 9-inch pie shell (baked)
- 1 quart Strawberries
- 1 cup sugar
- 2 tablespoons corn starch
- 1/2 pint whipping cream, whipped into stiff peaks
Instructions
- Pike out enough of the best berries near the same shape to cover the bottom of your pie shell.
- In a pan, put the sugar and corn starch. Cut up the remaining berries in this pan and mash them with a potato masher.
- Cook this over a slow heat until thickened, stirring constantly.
- Cool to room temperature.
- Arrange the reserved berries in the pie shell, points up.
- Pour the cooked mixture over the berries and refrigerate.
- At serving, top with a dollap of whipped cream
Final Comments
I have substituted the pie shell for tart shells when I needed individual servings.
