    This recipe is from my Mom's sister, Elsie Lena Froelich. Their family immigrated from Germany and settled in Morgantown, IN. These are a favorite of mine at Christmas.


    List of Ingredients


    • Cake Ingredients:
    • 2 cups sugar
    • 6 egg yolks
    • 1/2 cup sweet milk
    • 3 teaspoons baking powder
    • 1/4 lb grated bittersweet chocolate
    • 1 teaspoon cinnamon
    • 1 cup molasses
    • 3 beaten egg whites
    • 3 cups sifted flour
    • 1/4 lb citron, cut fine
    • 1/4 lb almonds, chopped, unblanched
    • 1/4 teaspoon cloves
    • ~*~*~*~*~*~*~*~*~*~*~
    • Icing Ingredients:
    • 2 egg whites
    • 1 1/2 cups confectioners sugar


    Instructions


    1. Beat the egg yolks well.
    2. Add the sugar and continue beating until light & fluffy.
    3. Stir in the molasses.
    4. Mix and sift the spices, baking powder and flour.
    5. Shake a little flour over the almonds, citron and chocolate.
    6. When thoroughly mixed, fold in the beaten eggs whites.
    7. Bake in 2 greased baking pans (12 x 8 x 2) at 350 degrees F for 1 hour
    8. Cool before icing.
    9. Icing Instructions:
    10. Beat two egg whites.
    11. Beat in the confestioners sugar and continue beating until the icing will spread well.
