Mom's Christmas Cookies
Christmas was my Father's favorite holiday. I remember Mom mixing batch after batch of these cookies. Of course, each and every one had to be decorated using sprinkles, chocolate jimmies, non-pariels, and those little silver balls.
List of Ingredients
- 1 cup white sugar
- 1 cup butter, softened to room temp.
- 2 cups flour
- 2 teaspoons baking powder
- 1 teaspoon vanilla
- 3 eggs, well beaten
Instructions
- Either by hand, or with a mixer, cream together the sugar and butter.
- Add the well beaten eggs and vanilla and mix again.
- Sift the flour and baking powder together.
- Gradually add the dry ingredients to make a dough.
- Divide dough into two balls and chill for approximately one hour.
- Remove one ball from refrigerator and roll to about 1/4 inch (maybe alittle thicker).
- Using cookie cutters, cut into shapes and transfer onto a cookie sheet lines with parchment paper.
- Bake at 350 degrees 8-10 minutes until just slightly brown on the edges. This time is only approximate. Ovens "back then" weren't really accurate.
- Remove to racks to cool.
- Mix up a batch of confectioners sugar icing, using just confectioners sugar and milk to make an icing.
- Decorate to your little hearts content.
Final Comments
You can keep a couple of children busy an entire afternoon decorating a couple of batches of these cookies. Hhmmm....maybe that's why Mom made them so often?
