List of Ingredients 2 round steaks totaling 3 lbs. salt, pepper and "plenty" of paprika 1/4 lb (4 oz. can) sliced mushrooms 2 medium onions, thinly sliced 1 1/4 cups fine bread crumbs 1/2 cup melted butter 1 tablespoon boiling water 1 egg 1 1/4 cups red wine 6-8 whole mushrooms 4-6 small whole onions Instructions Pound steaks until thin, overlap steaks making one large steak. Rub salt, pepper and paprika onto all surfaces of the meat. Spread the steak with a blanket of sliced mushrooms, then a layer of onions. Cover with the bread crumbs. With a beater, combine the the melted butter, water and egg. Immediately dribble this over the bread crumbs on the steak. Drain the olives and arrange in a row lengthwise down the steak. Roll the meat to form a log, beginning the roll around the olives. Tie firmly with butchers twine. Flour the outside of the log. Brown in another 1/4 cup butter in a roasting pan. Place the whole mushrooms and whole onions in the roaster and sprinkle lightly with salt, pepper and paprika. Add the wine to the roaster. Roast at 350 degrees F. for about 2 hours. If necessary, add water(or wine)a little at a time, do not let pan go dry. Remove from oven, let sit to rest for 10 minutes. Remove twine. Slice diagonally to serve. ***The pan drippings make a wonderful sauce, either thickened or right from the oven. Final Comments This wonderful recipe will serve 6, but don't plan on having any leftovers.
