Mixed Vegetable Antipasto
No fat, very low sodium. Children love it, great way to get your children to eat vegetables.
List of Ingredients
- 3/4 cup red onion, chopped
- 3/4 cup red bell pepper, chopped
- 1 cup green bell pepper, chopped
- 3 cups cauliflower flowers, cut into 1/2 inch pieces
- 1 cup carrots, chopped
- 2 cups, broccoli flowers, cut into 1/2 inch pieces
- 1/4 cup mixed sweet pickles
- 1/4 cup green olives, sliced
- 3 clove garlic, minced
- 1/4 cup pickled banana peppers, sliced
- 1 cup bottled chili sauce (Iuse Heinz)
- 1 cup water
Instructions
- Bring to a boil and simmer uncovered for 30 minutes or until most of the liquid has evaporated.
- Chill at least 2 hours
- Serve with Italian bread or crackers
- Makes 5 to 6 cups
