Oatmeal Pancakes
Since I found this recipe, in the early nineties, these are the only pancakes I make. They are wonderful warmed over. Best of all, no fat.
List of Ingredients
- 1/2 cups pecans
- 2 cups buttermilk
- 1 1/2 cups quick-cooking oats, (not instant) uncooked
- 1/2 cup all purpose flour
- 1 teaspoon baking soda
- 2 large eggs
- 1 tablespoon confectioners sugar
Instructions
- In a large skillet, over medium heat, cook pecans until golden brown, coarsely chop.
- In a large bowl, beat the eggs, add the buttermilk, oatmeal, flour, soda and sugar.
- Mix just until moistened.
- Stir in the chopped and partially cooled pecans.
- Heat skillet over medium heat until hot. Brush lightly with some salad oil.
- Pour butter by 1/4 cups into hot skillet. Cook until tops are bubbly and bubbles burst, turn and cook until other side is golden.
- Remove to warm platter and hold until all are cooked.
- Makes about 12 pancakes. Serves 4
