Frittata, Zucchini
Frittatas are so great, as they can be served hot or at room temperature.
3 tablespoons olive oil
1 medium onion diced
1 large tomato, peeled, seeded and diced
5 small zucchini, diced
1 teaspoon fine herbs
9 eggs, beaten
2 tablespoons Parmesan cheese, freshly grated
Heat olive oil over medium heat in a 10 inch oven proof pan
Add the onion and garlic and cook slowly until onion is translucent
Add zucchini, tomato, and herbs. Cover and cook until tender.
Mix, the eggs and the cheese and pour into vegetable mixture.
Cook over medium heat until firm.
Place under broiler to lightly brown the top.
Serves four to six
