    Banana Loaf Cake

    Recipe Introduction


    This recipe is from a winter 1997, Penzey’s Catalog


    List of Ingredients


    • 2 cups all purpose flour
    • 1 tablespoon baking soda
    • 1/2 cup butter or margarine
    • 2 eggs
    • 1 teaspoon vanilla
    • 1/2 teaspoon allspice
    • 1/2 teaspoon cinnamon
    • 1/2 cup buttermilk, or plain non-fat yogurt
    • 2 large bananas, mashed-very ripe the browner the better, enough to equal 1 cup
    • 1/2 cup chopped nuts, if desired


    Instructions


    1. Preheat the oven to 350 F

    2. Grease and flour 2 small loaf pans.

    3. Combine, flour, and baking soda. Mix well with a whisk, or sift

    4. Cream butter and sugar, until fluffy

    5. Add eggs, vanilla, allspice and cinnamon.

    6. Beat well

    7. Blend in the buttermilk or yogurt, then add the mashed bananas, flour mixture along with the nuts if using

    8. Blend until smooth and well mixed.

    9. Pour into loaf pans.

    10. Bake for 40 to 50 minutes

    11. When done, the loaf will have risen, be golden brown, and no gooiness will be visible inside the cracks on the top of the loaf



    Final Comments


    No, I did not forget to list salt, as I don't use it except for bread. I don't believe anything suffers by it's omission.
    It is best if the bananas are mashed with a fork, that will give you chunks in the batter.
    If subsituting yogurt for buttermilk, add a bit of milk, if yogurt is too thick.
