Crumb Cake
Every family reunion has several crumb cakes, some spiced some plain. I prefer the plain. It’s great at any time, with a cold glass of milk.
2 cups brown sugar
2 cup flour
1 tablespoon butter or margarine
1 teaspoon baking powder
1 egg, beaten
1 cup buttermilk, or plain yogurt**, or sour milk *
1 teaspoon baking soda
Preheat oven to 350 F
Grease and flour 9x9x2 inch pan.
Mix sugar, flour, butter and baking powder; with fingers work until all is mixed into fine crumbs.
Set aside one cup of the crumbs for the topping.
Mix the buttermilk, egg, and soda into the rest of the crumbs.
Pour into pan, sprinkle reserved crumbs over the top.
Bake for 30 to 35 minutes or until it tests done.
*You can sour milk, by adding 1 tablespoon vinegar or lemon juice to plain milk.
** If yogurt is too thick, add a couple of tablespoons of milk to thin it.
