    Easy Pound Cake


    Preheat oven to 350° F

    3 cups all-purpose flour
    1 pound confectioner's sugar
    4 sticks margarine (1 pound) -- softened*
    6 eggs -- room temperature
    2 teaspoons vanilla

    Place all ingredients in a bowl, in the order listed. Beat on low for 2 minutes, scrape the sides, then high speed of electric mixer until smooth and fluffy (another 2 to four minutes.) Pour into 10 inch bundt pan, greased and floured. (I use Baker’s Joy)

    Bake for 1 hour and 15 minutes or when a toothpick inserted comes out clean, and it is pulling away from the sides of the pan. It tends to brown very fast. If this is happening, cover with a piece of foil.


    *****Be sure it is solid margarine, (70% vegetable oil) and not spread.
