Genoise
6 eggs, at room temperature or warmer
1 cup extra fine sugar*
1 teaspoon vanilla
1 cup cake flour, sifted
1/4 cup butter melted, and cooled to lukewarm
Preheat oven to 350 F
Grease and line either 2 nine inch round pans,or 3 eight inch pans. Grease the lining.
In a very warm bowl, beat the eggs and sugar, until mixture stands in still peaks when beater is withdrawn. 5 to 30 minutes.
Add vanilla
Divide flour into eight portions.
Sift over egg mixture one portion at a time, folding in gently, but thoroughly.
Add lukewarm butter, one teaspoon at a time, folding in gently, but thoroughly.
Pour into prepared pans.
Bake for 30 to 40 minutes in lower 1/3 of oven.
*Whirl regular granulated sugar in the processor, to make it extra fine.
