    West Haven Date Cake


    Where it got this name I do not know. The recipe was passed on to me by my sister in the 1950’s.

    1 package (7 ounce) of pitted dates
    1 cup hot water
    1/2 cup butter
    1 cup sugar
    2 eggs, beaten
    1 teaspoon vanilla
    1 3/4 cups flour
    1 teaspoon baking soda
    1 teaspoon cocoa
    1/2 cup nuts, coarsely chopped
    1 (6 ounce ) package of chocolate chips

    Cut dates into pieces, add water, and bring to boil.
    Preheat oven to 350 F
    Grease and flour 9X13x2 inch pan
    Let cool, drain and save water.
    Thoroughly mix flour, soda, and cocoa.
    Cream shortening with sugar. Add vanilla, add eggs, one at a time, mixing well after each egg.
    Mix the dates with one cup of flour mixture, coating them well.
    Add flour alternately with date water, add floured dates.
    Pour into pan.
    Sprinkle with nuts and chocolate chips
    Bake for 35 minutes or until cake tests done.
    When cake comes from oven sprinkle with confectioners sugar (optional)

    Note: This is very good baked in 9 inch layers with a cream filling.
