    Caramel Corn

    2 1/2 quarts plain freshly popped, popcorn.
    1 cup nuts of your choice
    1/2 cup butter
    1 cup brown sugar
    1/4 cup light corn syrup
    1/2 teaspoon salt
    1/2 teaspoon baking soda.

    Preheat oven to 250 F

    To plain freshly popped corn, add nuts. spread in a large shallow pan. Put in preheated oven, while making syrup.
    In a large heavy saucepan, put the butter sugar and corn syrup, and salt. Bring to boil and cook until candy thermometer reaches 248 F.
    Take off heat , stir in the baking soda, it will foam up.
    Quickly pour it over the popped corn, stirring well to coat the corn and nuts.
    Return to oven and bake 45 minutes, stirring every 15 minutes.
