Del's Almond Biscotti
This is an old family recipe of my friend Del. Of all the biscotti I have made or eaten, this is the best.
2 tablespoons butter
1 cup sugar
2 large eggs
2 teaspoon almond extract
2 1/4 cups flour
1 1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup sliced almonds
1 egg white
Preheat oven to 350 F
butter a large baking sheet
Cream the butter, add the sugar and beat together.
Add eggs, one at a time
Add almond extract
Beat several minutes.
In a separate bowl, mix the flour, baking powder and salt.
Add flour mixture to creamed mixture.
Add almonds.
Mix just until well blended
Divide the dough in half, working on a baking sheet with floured hands. Form each piece into a flattish log, about 10 to 12 inches long and 2 inches wide.
Brush each log with egg white.
Bake until lightly browned, about 30 minutes.
Remove from oven and let cool for 5 minutes.
Reduce heat to 300 F.
On a cutting board, cut logs diagonally into 3/4 inch slices.
Arrange cut side down on baking sheet.
Return to oven and bake for 7 minutes.
Turn slices over and bake another 7 minutes.
Cool and store in an airtight container.
