Lime Cookies
Several years ago, a Lime Cookie won first prize in the Fancy Food Show. This is right up there with it. You can't eat just one.
List of Ingredients
- 3/4 cup butter, softened
- 3/4 cups sugar
- 1 egg white
- 3/4 teaspoon lime oil.
- 2 cups flour
- 1/4 cup cornstarch
- 1 cup pecans, very finely chopped
- 2 cups powdered sugar
Instructions
- Cream butter, when well creamed, add sugar, beat until fluffy.
- Add egg white and lime oil
- In a separate bowl mix together, flour and cornstarch
- Add to creamed mixture
- Slowly add the chopped pecans.
- Preheat oven to 350 F
- Grease baking sheet
- Form dough into 1 inch balls. Place on greased baking sheet.
- Flatten balls to 1/4 inch.
- Bake 18 to 20 minutes until edges just begin to brown, watch closely
- Roll warm cookies in powdered sugar and set on rack to cool.
- Shake powdered sugar over them again, when ready to serve.
Final Comments
Store in an air tight container. Good keepers.
