Oatmeal Cookies
This is the oatmeal cookie I was raised on. It is the original from a box of Quaker Oats.
I always make them with raisins.
1/4 cup shortening
1 cup firmly packed light brown sugar
1/2 cup granulated sugar
1 egg
1/4 cup water
1 teaspoon vanilla
1 cup flour
1 teaspoon salt
1/2 teaspoon soda
3 cups oats, uncooked
Preheat oven to 350 F
Beat shortening, sugars, egg, water and vanilla together until creamy.
Sift together flour, salt, and soda; add to creamed mixture; blend well.
Stir in oats.
Drop by tablespoons onto greased cookie sheets.
For variety add chopped nutmeats, raisins, chocolate chips, or coconut.
