    Rocky Road Brownies

    This is probably from Southern Cooking. Where ever it’s from, It was well worth clipping it. It is addictive, at least that is what I’ve been told many times.

    1st layer:
    1/2 cup butter, softened
    1 cup sugar
    1 (1 ounce) square unsweetened chocolate, melted
    2 eggs beaten
    1/2 cup pecans, finely chopped
    1/2 cup flour

    2nd layer:
    6 ounces (2 3 ounce packages) cream cheese, softened
    1/4 cup butter
    1/4 cup sugar
    1 egg beaten
    1/4 cup pecans, finely chopped
    1 tablespoon flour
    1/4 teaspoon vanilla extract
    1/2 cup chocolate morsels (or more to taste)
    2 cups miniature marshmallows

    Icing:
    2 (I ounce) squares unsweetened chocolate
    1/2 cup milk
    1/2 cup butter
    1/4 teaspoon vanilla extract
    1 pound powdered sugar, sifted.

    Preheat oven to 350 F
    Grease and flour a 13x9x2 inch pan.

    1st layer:
    Cream butter and sugar, add next 4 ingredients, mix well.
    Spoon into pan and set aside.

    2nd layer:
    Cream, butter, sugar and cream cheese
    Add next 4 ingredients and mix well.
    Spoon carefully over chocolate layer in pan,
    (do not mix layers together) Sprinkle chocolate morsels over cream cheese layer.
    Bake for 35 to 45 minutes. Remove from oven and cool slightly.
    Top with marshmallows.

    Icing.
    Combine 2 squares chocolate, milk and butter in top of double boiler, over simmering water. Cook until chocolate melts, stirring occasionally. Remove from heat, and stir in vanilla and powdered sugar. Spread frosting over brownies; cool.
    Cut into small squares, as this is very rich.
    Keep chilled.
