Apple Fritters
This was the biggest treat as I was growing up. We only had them when the apples came into season. They have to be eaten when they are still very warm. I dare to try to eat only one.
1 1/2 cups flour
1 tablespoon sugar
2 teaspoons baking powder
1/2 teaspoon salt
2 eggs, beaten, 2/3 cup milk
1 tablespoon salad oil
3 cups peeled, finely chopped apples
Hot salad oil
Powdered sugar
Combine dry ingredients in a bowl; add eggs, milk, salad oil and apples. Stir just until moistened.
Drop batter by spoonfuls into 1/2 inch hot oil. Cook until golden brown, (about 3 to 4 minutes on each side); drain.
Roll in powdered sugar while hot.
Serve immediately. Let the guests wait for the fritters, rather than having the fritters wait for the guests.
