Ginger Apple Crisp
After the first time I made this Apple Crisp, I knew that I would not ever make a n Apple Pie again. This is the ultimate.
3 pounds apples, peeled, cored and sliced
1 lemon, juiced
1 tablespoon cornstarch
3 tablespoons sugar
1/4 teaspoon ground ginger
1/8 teaspoon freshly grated nutmeg
1/2 cup chopped crystallized ginger
1 cup flour
1/2 cup firmly packed light brown sugar
6 tablespoons unsalted chilled butter, cubed
1/2 cup walnuts, chopped
Preheat oven to 400 F
Toss the apple slices with the juice of the lemon.
Mix cornstarch, sugar,ground ginger, nutmeg, and candied ginger. Add to apples and toss.
Arrange apples in a 2 quart baking dish.
In a bowl mix with fingertips until crumbly, the flour, brown sugar and butter.
Combine with the walnuts and sprinkle over apples.
Bake for 40 to 50 minutes, or until apples test done.
Best served warm with ice cream
