Meringue Dessert Shells
In our family this was the traditional New Year’s day dessert. That was the day that all our relatives, from my dad’s side came to dinner. The shells were served with frozen strawberries and real whipped cream.
Mother kept the berries, for the day, in a freezer at a local dairy until other freezers were available.This was the same place that we bought whipping cream, by the quart, and butter fresh out of the churn. As children we would sit and watch the huge churns going around and around, waiting for the butter.
1/8 teaspoon salt
1/8 teaspoon cream of tartar
2 large egg whites
1/2 cup sugar
1/4 teaspoon vanilla
Add salt and cream of tartar to egg whites. Beat until stiff enough to hold their shape. Beat in the sugar, 2 tablespoons at a time. Egg whites should stand in very still peaks and should be shiny and moist . Beat in vanilla.
Preheat oven to 250 F
Butter parchment paper lightly and dust with cornstarch. Mark 3 inch circles . Spread each circle with meringue to 1/4 inch thick. Build up the edges to 1 1/2 inches high.
Place the paper on a cookie sheet. Bake in preheated oven for 1 1/4 hour. Turn off the heat and cool in oven 1/2 hour.
Makes 6 shells
