Pineapple Mint Surprise
This is a desert that has calories galore, yet tastes so light. The perfect thing to serve when guests say they could not eat another bite. Serve about 2 inch squares, and offer more later. They will take you up on it.
Many have asked for the recipe, but never make it. It is very time consuming and brings a good price, should you wish to cater it.
1 cup flour
1/2 cup pecans, finely chopped
1/2 cup, plus 1 tablespoon butter
1 can (20 ounce) crushed pineapple, drained, save the juice
1 package, (3 ounce) lime flavored gelatin
1 package (8 ounce ) cream cheese
1 cup sugar
1 cup whipping cream, divided
1/2 teaspoon peppermint flavoring, divided
1/2 cup chocolate chips
Preheat oven to 400 F
Grease and flour bottom of 9x13x2 inch pan.
Combine flour, pecans, brown sugar, and 1/2 cup butter. Cut butter into dry ingredients until it resembles cornmeal.
Press into bottom of prepared pan. Bake for 12 minutes; cool.
Cream cheese with sugar until light and fluffy.
Heat pineapple juice to boiling, add to gelatin and stir until dissolved. Cool.
Add cooled gelatin mixture to creamed mixture and beat until blended. Stir in pineapple; chill until partially set.
Whip 2/3 cup cream until thick, stir in 1/4 teaspoon flavoring.
Fold flavored whipped cream into partially set gelatin mixture.
Spoon mixture over the baked crust.
Refrigerate until set.
Melt chocolate chips in double boiler. Stir in 1 tablespoon butter, 1/3 cup whipping cream and 1/4 teaspoon flavoring.
Spread carefully over fully set dessert. Refrigerate at least 4 hours.
