Shortcake
2 cups flour
2 tablespoons sugar
3 teaspoons baking powder
1/4 teaspoon salt
1/2 cup butter
1 egg, lightly beaten
2./3 cup milk
Preheat oven to 450 F
Sift or whisk dry ingredients together.
Cut in butter until mixture resembles coarse crumbs.
Combine egg and milk; add all at once to dry, stirring just to moisten.
Pat dough into greased 8x1 1/2 round pan, building up slightly around the edges.
Bake 15 to 18 minutes, or until golden brown.
Remove from pan, cool slightly on a rack.
With a serrated knife split into 2 layers, lifting top off carefully.
Spoon fruit and whipped cream between layers and over top.
Serve warm.
