    Almond Paste

    1/2 cups whole blanched almonds (about 8 ounces)
    1 1/2 cups powdered sugar, sifted
    1 egg white
    1 teaspoon almond extract

    Grind almonds, a small portion at a time, in blender or processor.
    You should get about 1 3/4 cups ground nuts.
    Combine with rest of ingredients and work to a stiff paste.
    Store in refrigerator tightly wrapped in plastic wrap, or in a plastic bag.
