Beef - All American Meat Loaf
Even those that hate meat loaf have asked for this to be served again. It’s moist when hot and firms up when cold. Excellent in sandwiches.
3 pounds ground chuck
1 1/2 cups uncooked quick-cooking oatmeal
1 medium onion chopped
1 1/4 cup milk
1 1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
3 large eggs, lightly beaten
1 tablespoon worcestershire sauce.
Preheat oven to 350 F
Add milk to oats and let stand for about 20 minutes.
Add rest of ingredients and mix well. Hands work best for this.
Form into an oblong shape and place into 9x13x2 inch pan.
Bake for 1 1/2 hours, or until juices run clear.
If you want it to absorb the juices from the pan, let it stand for about 20 minutes before serving. That is what I used to do. Now that I am trying to cut back on fat, I remove it from the pan, immediately on taking it from the oven.
