Beef - Old Fashioned Beef Stew.
First make 2 double Old Fashioned (1 teaspoon Angostura bitters,1 tablespoon sugar and 4 ounces bourbon.) Set one aside for later. Sip the other one slowly as you make the stew.
4 tablespoons butter
3 1/2 to 4 pounds of beef for stew
1 1/2 teaspoons ground cloves
1/2 teaspoon ground allspice
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 beef bullion cubes
1 1/2 cups water
8 carrots cut into 2 inch pieces
1 can (1 pound) boiled onions, drained
1 can (1 pound) green lima beans, drained
1 double Old Fashioned (1 teaspoon Angostura bitters, 1 tablespoon sugar, 4 ounces of bourbon)
Melt the butter in a Dutch Oven. Brown the beef, on all sides, a few cubes at a time. (too many at a time, it won’t brown, it will just steam.) Remove as the cubes brown and set aside. When all browned put all cubes back into the pan.
Add the spices and seasoning.
Add bullion cubes and water, cover tightly and simmer 1 1/2 hours
Mix the sugar, bitters and bourbon, pour over meat.
Cover and cook 15 minutes
Add carrots, simmer covered 1 hour.
Add the onions a lima beans, simmer for 15 minutes.
I serve this with steamed dumplings, cooked on top of the stew.
