Funeral (raisin) Pie
This is a wonderful keeper, does not need refrigeration. It was a staple at funeral receptions when I grew up.
Pastry for 2 crust 9 inch pie, unbaked
3 tablespoons cornstarch
1/2 cup sugar
1 3/4 cup water
2 1/2 cup seedless raisins
2 tablespoons fresh lemon juice
2 teaspoons grated lemon rind.
2 tablespoons butter
Preheat oven to 400 F
Mix cornstarch with sugar
Gradually stir in water
Add raisins and cook over low heat, stirring constantly
until mixture thickens.
Remove from heat
Add lemon juice, grated rind, and butter
Pour into prepared crust
Cover with top crust and make slits for steam to escape
Bake 30 minutes
Serve warm or cold.
