    Quick and Easy Lemon Pie (no cooking)


    1 8 inch baked pie shell

    1/2 cup fresh lemon juice
    1 teaspoon grated lemon rind
    1 (15 ounce) can of sweetened condensed milk
    2 eggs, separated
    1/4 teaspoon cream of tartar
    1/4 cup sugar.

    Separate eggs
    Beat yolks lightly and combine with lemon juice, rind, and condensed milk.
    Pour into cooled shell.

    Preheat oven to 350 f

    In a separate metal bowl, beat egg whites until frothy.
    Add cream of tartar
    Add sugar slowly, beating well until egg whites are stiff.
    Mound on filling, spreading to edges, touching the crust.

    Brown meringue in heated oven, about 10 minutes.
