Rice Dressing.
Preheat oven to 350 F
Butter a 11x9x3 pan
2 cups long grain raw rice
3 large onions
4 stalks celery, coarsely chopped
1 green pepper, cut in 1/2 inch cubes
1/2 pound mushrooms, sliced
1/2 cup butter
2 cups chopped cooked giblets
1 tablespoon poultry seasoning
2 eggs, beaten
1 cup chopped pecans
1/2 cup fresh parsley, chopped
2 cups chicken broth, more or less
Cook rice
Saute vegetables until tender
Mix cooked rice, sauteed vegetables, giblets, seasoning, beaten eggs, pecans and parsley. Moisten with the broth until it meets the desired consistency.
Pour into prepared pan.
Bake for 30 minutes
