Minted Onions
Anyone that lives in Vidalia Onion Country, is constantly on the look out for new onion recipes. I found this in the Woman's Day Encyclopedia of Cooking.
List of Ingredients
- 2 cups thinly sliced onions
- ice water
- 2 tablespoon fresh mint,chopped
- 1 cup apple cider vinegar
- 2/3 cup sugar
Instructions
- Cover the sliced onions with ice water, soak overnight, drain
- add the chopped mint,vinegar, and sugar
- Stir well until sugar has dissolved.
- Serve, divided on lettuce leaves or serve in a tossed green salad
