    Lemon Sauce

    Growing up, we lemon sauce always topped our bread pudding. The pudding could be hot or cold, the sauce was always hot.

    1 tablespoon cornstarch
    1/3 cup sugar
    2/3 cups water, boiling
    2 tablespoons lemon juice
    1/2 teaspoon grated lemon rind
    1 1/2 tablespoons butter (optional)

    Mix cornstarch and sugar in a small saucepan. Add the boiling water. Bring to boil, lower the heat and simmer for 5 minutes, stirring frequently.
    Remove from heat, add the lemon juice, grated rind and butter. Mix well.

    I usually double the recipe, as I like lots of sauce.
