Lean Refried Beans
2teaspoons vegetable oil
1/3 cup finely chopped onions
1 teaspoon minced garlic
1/2 teaspoon ground cumin
1/8 teaspoon ground red pepper
1 can (15 ounce) pinto beans, drained and rinsed
1/4 cup warm water
2 teaspoons lemon or lime juice
Heat oil in medium pan with cover.
Add onion and cook until transparent
Add garlic, cumin and red pepper.
Stir and cook for 30 seconds
Add beans and cook 1 minute more, mashing beans.
Stir in water; cook until water is absorbed
Remove from heat and stir in lemon juice.
