Lemon Potatoes
2 pounds baking potatoes
1 teaspoon grated lemon rind
1/4 cup butter, melted
1/4 cup parsley, chopped
1/4 teaspoon nutmeg
salt and pepper to taste
1/4 cup fresh lemon juice
3 tablespoons chives, chopped.
Preheat oven to 450 F
Cover potato pieces with boiling salted water.
Bring to boil and simmer for 4 minutes.
Drain.
Grease a casserole.
Turn drained potatoes into casserole.
Add butter, parsley, nutmeg, and pepper.
Cover with foil.
Bake 25 minutes or until tender.
Pour lemon juice over all and sprinkle with cut chives.
Serves 6
A great dish to serve with leg of lamb that’s been roasted with garlic, oregano, and lemon juice.
