Lo-fat Scalloped Potatoes
Preheat oven to 350 F
Butter a 1 1/2 to 2 quart casserole, with a cover
1 3/4 cup skim milk
1 cup non-fat sour cream
3 tablespoons butter
1 tablespoon cornstarch
freshly grated black pepper
1 1/2 pounds potatoes, peeled and thinly sliced.
Mix the milk, sour cream butter, cornstarch and pepper
Layer potatoes and then a layer of cream mixture.
Continue layering ending with creamed mixture
Cover and bake 1 hour
Remove cover and bake another 20 minutes.
