Mixed Vegetable Antipasto
No fat, very low sodium. Children love it, great way to get your children to eat vegetables.
List of Ingredients
* 3/4 cup red onion, chopped
* 3/4 cup red bell pepper, chopped
* 1 cup green bell pepper, chopped
* 3 cups cauliflower flowers, cut into 1/2 inch pieces
* 1 cup carrots, chopped
* 2 cups, broccoli flowers, cut into 1/2 inch pieces
* 1/4 cup mixed sweet pickles
* 1/4 cup green olives, sliced
* 3 clove garlic, minced
* 1/4 cup pickled banana peppers, sliced
* 1 cup bottled chili sauce (Iuse Heinz)
* 1 cup water
Instructions
1. Bring to a boil and simmer uncovered for 30 minutes or until most of the liquid has evaporated.
2. Chill at least 2 hours
3. Serve with Italian bread or crackers
4. Makes 5 to 6 cups
