Lentil Curry
List of Ingredients
- 1/2 cup dried lentils
- 1/2 cup milk
- 1 medium onion, diced
- 1 1/2 cups water
- 1 teaspoon curry powder
- 1 tablespoon fresh lemon juice
Instructions
- Soak lentils overnight in the milk, do not drain
- Brown onion in non-stick pan, coated with a vegetable spray
- Add water, curry powder, lentils and milk
- Simmer for 1 hour, or until lentils are tender
- Add more water if necessary
- Season to taste
- Add lemon juice just before serving.
- Serve over rice
