2/3 cup unsifted flour
3 teaspoons salt
1/2 teaspoon pepper
7 1/4 pounds chuck roast or 6 1/2 lb. boneless round ro
1/4 cup fat or oil
1 cup water
oregano (optional)
Recipe
Mix flour, salt and pepper. Coat meat with mixture. Heat fat in heavy pan. Brown meat on all sides. Add water as needed to prevent over browning.
Cover tightly and cook over low heat or in 350 degree oven until tender.
